Tie Guan Yin - Oolong Tea

Tie Guan Yin is a popular type of oolong tea. Oolong teas are semi-oxidized, which puts them in a category between green and black teas in flavor and appearance. The controlled level of oxidation creates a complex flavor profile.

Tie guan yin (simplified Chinese: 铁观音;  pinyin: tiěguānyīn;  It mean 'Iron Goddess of Mercy';  is a variety of Chinese oolong tea that originated in the 19th century in Anxi in Fujian province. Tieguanyin produced in different areas of Anxi have different gastronomic characteristics.

Preparation Instructions:1. Boil water, we recommend using spring water.2. Add the tea leaves to a clay teapot, filling 1 package/8g tea leaves.3. Add boiled water to the pot, infuse tea for only 3 seconds. You can increase the steep time to 30 seconds as you reach final instructions.4. After you rinse the first pour, infuse tea for only 3 seconds and do not let tea soak in the water as it will ruin the tea. High quality tea is very potent and you only need to steep for a short period of time. You can increase steep time more as you reach final infusions.This tea can be steeped 10-15+ times yielding about a total of 1 quart of tea.
